Cinnamon (Saigon/Cassia)

Do not substitute for Ceylon if you consume large daily amounts for health reasons because it has higher coumarin.

Delivers a bold, sweet-spicy, and assertive punch with high essential oil levels. It works best in heavy baked goods, cinnamon rolls, and savory meat rubs.

Contains much higher levels of coumarin (roughly 1% to 5%), a natural compound that can cause liver damage if consumed in large, regular amounts over time.

Use about two-thirds the amount of Saigon when replacing Ceylon because Saigon is significantly stronger.
