How to keep cookies from going flat
- Butter temperature: Use butter that is slightly soft and indentable, never melted or greasy.
- Measure flour: Use a digital scale or spoon flour into your measuring cup instead of scooping it directly, as too little flour causes spreading.
- Fresh leaveners: Check that your baking soda and baking powder are fresh and active, because old leaveners fail to give cookies a proper rise.
- Shape the dough: Roll your dough balls taller and more compact rather than short and wide.
- Cool baking sheets: Never place fresh or cold cookie dough onto a warm baking sheet from a previous batch.
- Baking surface: Line your pans with un-greased parchment paper instead of greasing them or using dark, heat-absorbing metal sheets.
- Mixing technique: Avoid overmixing your dough after adding the flour to prevent breaking down the structure.
