Tips: Traeger 3-2-1 ribs method for best smoked ribs
- Rinse and pat dry ribs with paper towel
- Score membrane (silver skin) on concave side of ribs, and peel it off with a paper towel
- Salt ribs and let dry brine for an hour
- In spray bottle, mix apple juice, mustard, and maple syrup
- In medium bowl, mix glaze ingredients and set aside
- Preheat smoker to 225º or high smoke
- After ribs have brined for an hour, spritz them with the spray bottle
- Completely cover ribs with rub and put in smoker for about three hours
- Spread glaze over ribs and cover in foil and continue smoking another two hours
- Remove foil and cook an additional hour, spreading more glaze over the top
- They are ready when you pick them up with tongs, give a slight bounce, and see a large crack on the surface of the meat. They need more time if this doesn’t happen.
