Peach Freezer Jam

Ingredients
  • 4.5 C granulated white sugar
  • 4 large or 5 medium size peaches—just ripe, not over or under ripe
    • Washed to remove fuzz
  • 1.5 T fresh lemon juice
  • 3.5 oz powdered pectin (2 boxes of SureJell are 1.75 oz each)
  • 1.5 C water
Instructions

Stirring times are very important to eliminate the grainy texture associated with freezer jams

  1. Wash and rinse glass jars or plastic containers and lids with hot soapy water. Dry thoroughly.
  2. Cut peaches in half, remove pit, and slice into 1/4 inch slices—dice into 1/4 inch pieces
  3. Measure exactly  three cups of prepared fruit into large microwave-safe bowl
  4. Add sugar and lemon juice and stir well for one minute
  5. Place bowl in microwave on high for three minutes
    1. Mixture will not cook but will become warm enough for sugar to dissolve
  6. Remove and stir well for another minute
  7. Allow peach mixture to sit for one hour
  8. At 30 minutes, stir for one minute
  9. After the hour, give it a taste—if it’s grainy, repeat steps 5 and 6.
    1. When sugar is thoroughly dissolved, the mixture will deepen in color and lose its cloudiness
  10. Combine the pectin and water in a medium saucepan
    1. Bring to a boil on high heat, stirring constantly
    2. Cook and stir one minute, adjusting the heat so the mixture doesn’t boil over
  11. Add to the peach mixture and stir three minutes
  12. Fill containers to about 1/2 inch from top—don’t go too high as the mixture will expand when freezing
  13. Wipe off top edges of containers and cover with lids
  14. Let stand at room temperature 24 hours
  15. Refrigerate up to three weeks or freeze up to one year
  16. Thaw in refrigerator
