Instructions
Stirring times are very important to eliminate the grainy texture associated with freezer jams
- Wash and rinse glass jars or plastic containers and lids with hot soapy water. Dry thoroughly.
- Stem and crush strawberries with a potato masher—don’t use a blender or food processor
- Measure exactly two cups of prepared fruit into large microwave-safe bowl
- Add sugar and stir well for one minute
- Place bowl in microwave on high for three minutes
- Mixture will not cook but will become warm enough for sugar to dissolve
- Remove and stir well for another minute
- Allow strawberry mixture to sit for two hours
- Every 30 minutes, stir for one minute—doing this will remove the grainy texture
- When sugar is thoroughly dissolved, the mixture will deepen in color and lose its cloudiness
- Combine the liquid pectin and lemon juice in a small bowl
- Add to the strawberry mixture and stir three minutes
- Fill containers to about 1/2 inch from top—don’t go too high as the mixture will expand when freezing
- Wipe off top edges of containers and cover with lids
- Let stand at room temperature 24 hours
- Refrigerate up to three weeks or freeze up to one year
- Thaw in refrigerator
