Opa Dittrich's Bread (Original Version)

Ingredients
  • 2 T sugar
  • 5 C warm water
  • 1.5 T dry yeast
  • 7 C whole wheat
  • 3 C rye flour
  • 5 C white flour
  • 1 T salt
  • 1 T garlic powder
  • 2 T coriander
  • 2.5 T caraway
  • 2 t dill weed
Instructions

DO NOT USE a bread mixer or consumer-grade mixer to knead the dough. Use at the very least a 700W Bosch or Professional Series Kitchen Aid.

  1. In a small bowl, dissolve sugar in water
  2. Add yeast and give a quick stir, letting it activate for about five minutes
  3. In a very large bowl, combine grain flours, salt and seasonings with a large whisk
  4. Pour yeast mixture into the dry ingredient bowl
  5. Combine all ingredients by stirring until shaggy in appearance
  6. Knead until smooth for about 30 minutes (Kreg says this is a crucial step)
  7. Divide into three loaves
  8. Place on well greased cookie sheet
  9. Using a sharp knife, cut a few diagonal slits in the top of the loaves
  10. Spray tops of loaves lightly with olive or canola oil
  11. Let rise until doubled in size
  12. Bake at 350–400º for 40–50 minutes
  13. Let cool at least an hour before cutting
