Triple Meat Barbecue

Ingredients
  • 12 country-style beef ribs
  • 12 country-style pork ribs
  • 12 skinless chicken breasts
  • 4 16 oz barbecue sauce
    • For variety, mix several flavors or use your own recipe
Instructions

14” Dutch oven with 3–3.5 hours cooking time

  1. Preheat Dutch oven over 16 briquets.
  2. Slightly oil the cooking surface.
  3. Starting with the beef, cook each rib until brown.
  4. Brown the pork ribs.
  5. Drain both as needed.
  6. Return to the oven.
  7. Cover with barbecue sauce.
  8. Reduce briquets to 12 and simmer for two hours (briquets will have to be replenished every hour of cooking time).
  9. Stir often, scraping bottom and sides of oven to prevent scorching.
  10. Add 12 skinless chicken breasts and continue cooking for another hour or until all three meats are tender.
  11. Broth from the chicken will thin the sauce. If a thicker sauce is desired, cook with the lid slightly cracked open.
  12. Each serving consists of one piece of meat from each (pork is lighter in color than the beef).
  13. Time saving tip: start chicken cooking in a second Dutch oven one hour after step five.
