Ingredients
- Potatoes
- cleaned with a stiff brush and cold water (do not soak)
- bad spots removed with tip of a knife
- dried thoroughly with a clean towel
- Cooking oil or butter
- Coarse or sea salt (optional)
Instructions
- Pierce each potato deeply at least four times on each side at about one inch intervals
- if you don’t pierce them, they could explode—no, seriously!
- Coat potatoes cooking oil or butter
- Roll potatoes lightly in salt
- Bake at 350º until tender—about one hour
- Rotate potatoes upside down to reduce too much browning on the bottoms
- Higher oven temperatures make the skins crispier and reduce baking time.
